    春节并非一个适合去餐厅庆祝的节日。这是一个属于厨房、属于餐桌的节日。如果你有幸受邀走进当地人家中,或者恰好身处合适的城镇,这将是你能在越南体验到的最棒的美食盛宴。

    以下是五个春节美食文化底蕴深厚的地方,以及你在当地必尝的美味。

    河内 — 北方的仪式感餐桌

    没有哪座城市像河内这样重视春节饮食。北方的传统正式、讲究,且代代相传,几乎没有改变。核心主角是“banh chung”(越南粽)——这是一种由糯米、绿豆沙和肥猪肉制成的方形厚实糕点,用柊叶包裹并煮上一整夜。虽然现在仍有家庭在家制作,但从1月底开始,你就能在街头看到小贩们将它们堆成金字塔状售卖。

    一顿地道的河内春节大餐还包括“gio lua”(丝滑蒸猪肉卷)、“mang lon”(用猪蹄炖煮的干笋汤),以及为了解腻而配的腌制小葱“dua hanh”。春节前夕,值得去老城区的同春市场 (Dong Xuan Market)逛逛——不是为了那些卖服装和塑料制品的主摊位,而是为了周边那些售卖糖渍姜片、干莲子以及河内祖母们制作春节菜肴所需各种腌制食材的摊贩。

    如果你能通过民宿房东或当地朋友获得邀请,去河内人家中吃一顿除夕团圆饭,那将是无可替代的体验。如果做不到,可以寻找“bun thang”——这是一种仅在春节前后供应的精致鸡肉蛋丝米粉汤,在老城区只有少数几家老摊位会卖,千万不要错过。

    顺化 — 充满皇室气息的平价春节

    顺化的春节饮食传统带有皇室遗风,尽管这座城市在节日期间显得低调而宁静。“Banh tet”在这里取代了方形的banh chung——这是一种圆柱形的亲戚,同样由糯米和猪肉制成,但口感更扎实,切成圆片食用。顺化版本的banh tet通常会加入香蕉,味道明显更甜。

    会安 — 步行即可抵达的乡村美食

    会安的春节优势在于地理位置。在距离古镇3公里的范围内,坐落着真实的村庄,那里的节日氛围完全不是旅游产品。锦清(Cam Thanh)和锦金(Cam Kim)村至今仍保留着社区烹饪的传统,邻里们在除夕前夜聚集在一起,用柴火共同制作banh tet。

    春节期间,古镇禁止摩托车通行,秋盆河沿岸挂满了灯笼——餐饮重心从餐厅转移到了售卖“cao lau”(会安小麦面,因水质独特,在其他地方吃不到这个味道)的家庭摊位,以及各式各样的甜品“che”。

    如果你在春节前三天留在会安,找一家第二天就开门的banh mi摊位——会安的banh mi是越南最受追捧的美食之一,在新年清晨7点空荡荡的街道上享用它,绝对值得列入你的行程。

    西贡 — 属于所有人的春节,包括外来者

    春节期间,数百万居民返乡,西贡变得空旷。剩下的城市反而变得适合步行,餐饮重心也转向了各地特产。来自湄公河三角洲、中部高地和北方的务工者虽然回家了,但他们的食物留了下来。平盛区和第五郡的市场里,除了南方的“banh tet”,还能买到来自各省的“banh chung”和各种“mut”(糖渍果蔬)。

    滨城市场(Ben Thanh Market)会关门,但周围的街道挤满了花贩和季节性小吃摊。春节期间依然营业的“Com tam”(碎米饭)摊位成了社区的支柱——一份50,000越南盾的米饭配烤猪肉和煎蛋,是留守西贡的人们最常吃的餐点。

    至于饮品,第一郡那些在节日期间依然营业的“bia hoi”(鲜啤)街角是社交中心——陌生人和留守的当地人坐在一起,喝着10,000越南盾的生啤,愉快地抱怨着天气。

    芹苴 — 水上市场的湄公河春节

    芹苴的春节比北方城市更安静、更居家,这正是它值得考虑的原因。丐冷(Cai Rang)水上市场在节日期间缩短了营业时间,但并未完全关闭——在春节第二天清晨6点乘船前往,看着摊贩们售卖挂着红丝带的菠萝和柚子,这种景象几十年来从未改变。

    湄公河三角洲的春节餐桌上少不了“hu tieu”(清淡的猪肉海鲜米粉汤),以及用焦糖酱在陶锅中炖煮的河鱼。“Banh tet chay”(素食糯米糕)则是为了那些在新年头几天不吃肉的佛教家庭准备的。如果你提前询问,宁桥码头(Ninh Kieu)沿岸的民宿通常会为客人准备非正式的春节餐点。

    实用贴士

    春节的时间通常在1月底到2月中旬之间,具体取决于农历——请在预订前确认确切日期。除夕前后3-4天交通非常拥堵;请至少提前三周预订火车和巴士票。大多数餐厅会关门3-7天,因此平价街头小吃和市场摊位将成为你的主要选择——说实话,这反而能带来更好的体验。
