    十天,三个地区,二十五道美食。这条路线由南向北延伸——如果你是飞往 Hanoi,也可以反向规划——并将每个城市都视为一个专门的“美食站”,而非仅仅是风景背景。

    第1天 — Saigon:南部经典

    在旅游团抵达之前,先去 Ben Thanh Market。在 Le Thi Rieng 的 Huynh Hoa 买一个“banh mi”——35,000 VND,馅料多到几乎要溢出来。沿着 Pham Ngu Lao 散步消食,然后在 Nguyen Trung Truc 找个塑料凳坐下,来一份“com tam”(碎米饭配烤猪排和猪皮丝),价格约50,000 VND。午餐是 Tran Hung Dao 上 Phuoc Thanh 的“goi cuon”(鲜虾春卷)——两卷20,000 VND,记得蘸花生酱,而不是鱼露。

    第2天 — Saigon:面条、煎饼与炸春卷

    早餐是“hu tieu”(猪肉海鲜清汤粉)——在第3区 Ly Chinh Thang 的小巷里找个摊位。这是Saigon做得比任何地方都好的菜肴,汤底应该比 pho 更清淡。中午,前往 Dinh Cong Trang 的一家“banh xeo”(越南煎饼)店——煎饼大如车轮,里面塞满了虾、猪肉和豆芽。用生菜包着它,配上新鲜香草一起吃。晚上:在 Saigon 唐人街区 Cho Lon 的任何街头摊位来一份“cha gio”(炸猪肉春卷)。这里的版本会在馅料里加入芋头。

    第3天 — 湄公河三角洲一日游,随后飞往 Da Nang

    早晨前往 Can Tho(车程两小时),在水上市场区域品尝蟹肉“banh canh”(粗米粉汤)——60,000 VND 一碗,分量十足。随后返回 Saigon,下午飞往 Da Nang。晚班机,无需晚餐——明天你会吃得够多。

    第4天 — Da Nang 与前往 Hoi An 的路途

    Da Nang 更多是一个交通枢纽而非美食之都,但它凭借“mi quang”(姜黄面配猪肉、虾和少许浓郁汤汁)赢得了自己的一席之地。去 Tran Binh Trong 的 Mi Quang Ba Mua 尝尝——40,000 VND。这道菜一定要撒上碎米饼并配以新鲜香草,否则就不地道了。下午,租一辆摩托车向南骑行30公里前往 Hoi An。

    Hoi An 有一道誓死捍卫的招牌菜:“cao lau”(厚小麦面配猪肉、炸面块、蔬菜和近乎干拌的酱汁)。面条是用当地特定水井的水制作的——这并非营销噱头,它确实改变了口感。在 Tran Phu 的 Thanh Cao Lau 品尝,45,000 VND。第二道菜:在靠近日本廊桥的任何街角摊位品尝“banh cuon”(蒸米卷,配猪肉末和木耳)。比看起来更轻盈细腻;建议点两份。

    第6天 — Hue:越南中部的严肃美食之城

    从 Hoi An 乘巴士穿过海云岭(Hai Van Pass),四小时的车程绝对物超所值。Hue 是越南每平方公里内美食密度最高的城市。从“bun bo hue”(顺化牛肉粉)开始——这种辛辣、香茅味浓郁的牛肉米粉汤,在当地远胜 pho。去 Chi Lang 的 Bun Bo O Bep,45,000 VND。下午:在皇城附近的街头小贩那买一个“banh chung”(香蕉叶包裹的绿豆猪肉糯米粽)。它比看起来更扎实——吃半个就够了。晚上:在 Hung Vuong 的一家店品尝“nem chua”(发酵猪肉卷)。冷食,用蒌叶包裹,配上大蒜和辣椒。

    第7天 — Hue:汤底的余韵

    在 Hue 的第二天是为了“bun rieu”(蟹肉番茄米粉汤)——番茄底使其成为越南系列中最独特的汤底之一。在 Dong Ba 市场附近的早市可以找到,35,000 VND。这也是尝试“banh canh cua”(蟹肉粗米粉汤)的城市,其汤底比湄公河版本更浓郁。下午乘火车北上前往 Hanoi——夜间卧铺可以省下一晚住宿费。

    第8天 — Hanoi:北方的基石

    早晨抵达 Hanoi,放下行李,直奔 pho 店。Bat Dan 的 Pho Gia Truyen 是标准参考——60,000 VND,牛骨汤熬制十二小时,扁米粉,配上切片牛腩和牛筋。没有配菜盘,没有是拉差辣椒酱。这就是北方的 pho。中午,在 Hang Manh 附近找一家“bun cha”(烤肉米粉,配冷米粉和蘸汤)。正确的吃法是将米粉蘸入汤碗中,而不是把汤倒在米粉上。下午:漫步老城区,在 Dong Xuan 市场停下来品尝“bun thang”(一种精致的鸡肉鸡蛋米粉汤,传统上用春节剩菜制作)——45,000 VND。

    第9天 — Hanoi:饮品与老城区守护的美味

    早餐再次品尝“banh cuon”,但这是 Hanoi 版本——不加馅的蒸米卷,配上 cha lua(猪肉香肠)和清澈的蘸汤。Thanh Nien 路上的 Bun 是一家可靠的店。然后是咖啡:“ca phe sua da”(越南冰炼乳咖啡)在哪儿喝都行,但 Hanoi 是你尝试“鸡蛋咖啡”(ca phe trung)的地方——去 Nguyen Huu Huan 的 Giang Cafe。它是将蛋黄和炼乳打发后铺在浓缩咖啡上的温热奶冻。口感奇特却非常对味。下午:在 Hoan Kiem 区的小贩那品尝北式“cha gio”(更小、更脆,用米纸而非小麦皮制作)。

    第10天 — Ninh Binh,随后返程

    在 Hanoi 以南两小时车程处,Ninh Binh 值得为一道特定菜肴停留一天:“com chay”(锅巴),配上炒羊肉和蘑菇酱。这是极具地方特色的美食,在 Hoang Dieu 的任何餐厅价格约 80,000 VND。这并不在每条越南行程中,而这正是它的意义所在。下午中期返回 Hanoi,这样还有时间在 Long Bien 大桥附近找个 bia hoi 角——Hanoi 的新鲜扎啤,7,000 VND 一杯,坐在塑料凳上喝到天黑。

    实用贴士

    仅餐饮预算每天预留 150,000–250,000 VND ——这条路线特意选择了平价美食。Hue 到 Hanoi 的夜间火车请至少提前三天预订,尤其是在旅游旺季(12月至2月)。最佳用餐时间是早上 7 点到 9 点,用于 pho 和 bun cha 等早餐,它们通常在中午之前就卖完了。
