    Best Cao Lau in Hoi An: Where Locals Actually Eat

    距离Saigon 200公里的Binh Thuan海岸线,其美食地位远未得到应有的重视。Phan Thiet拥有独特的区域性烹饪风格——以鱼露、新鲜海鲜为核心,还有一种与Saigon版本截然不同的“banh xeo”;而Mui Ne则增加了烤虾、螃蟹火锅,以及那种让你想在脚踩沙滩时享用的晨间汤面。这是一场你可以从周五晚上持续到周日下午的旅行,无需请假。

    前往方式

    最快的方式是乘坐从Saigon的Mien Dong车站出发的卧铺巴士——大约4小时到达Phan Thiet市中心,票价根据运营商不同约为120,000–180,000 VND。Futa Bus和Phuong Trang都有可靠的班次。周五晚上出发,午夜前到达,办理入住,周六一早即可开启美食之旅。或者,你也可以在Saigon租一辆摩托车,沿1号公路骑行前往Phan Thiet(约4.5小时)——这样更灵活,沿途还可以随时在路边摊停下品尝美食。

    第一天 — Phan Thiet:鱼露之乡与滋滋作响的煎饼

    上午:市场与那一碗面

    早上8点前前往Phan Thiet市场(Cho Phan Thiet,位于Tran Hung Dao)。市场内的美食摊位开得很早,供应“banh canh”——这是一种类似乌冬面的粗面,配以浓郁的猪肉或螃蟹高汤,每碗约30,000–40,000 VND。Phan Thiet的版本比你在Saigon吃到的海鲜高汤味更浓,配菜也非常丰富:青柠、辣椒、豆芽和新鲜香草。

    早餐后,逛逛市场的生鲜区。Binh Thuan省生产了越南(Vietnam)约40%的鱼露,你会随处可见原材料——干鱼、发酵虾酱、成箱的新鲜凤尾鱼。买一瓶Nam Ngu或当地品牌带回家;市场价格比任何机场商店都要划算。

    下午:Binh Thuan风味的Banh xeo

    Phan Thiet的banh xeo比你在Saigon或Hoi An吃到的超大号南部煎饼更小、更脆。面糊更薄,馅料通常是虾、猪肉和豆芽,它们是堆叠在篮子里,而不是像盘子里那样折叠起来。吃的时候,撕下一块,用芥菜叶和米纸包裹,然后蘸上nuoc cham(鱼露蘸水)。Nguyen Dinh Chieu(主干道)和Duc Thanh学校周边有几家店做得很好——寻找那些门前有木炭炉、午餐时排长队的摊位,每份价格约50,000–70,000 VND。

    下午在Phu Hai附近的Phan Thiet鱼露村(Lang nuoc mam)度过——从市中心乘坐xe om(摩托车出租)或Grab即可到达。木桶房里的气味正如你想象的那样,如果你喜欢越南菜并想了解你平时吃的是什么,那么了解其制作过程(凤尾鱼与盐分层,发酵12–15个月)是非常有趣的。

    晚上:Lau ca duoi与路边啤酒

    晚餐前往河滨大道Bach Dang沿线的一众海鲜餐厅。如果在菜单上看到“lau ca duoi”——黄貂鱼火锅,一定要点。鱼肉在汤中煮熟后会变成洁白的鱼片,锅里还放满了菠萝、番茄和莳萝。双人火锅价格为150,000–250,000 VND。配上一杯生啤;日落时分,河边会出现bia hoi啤酒车。

    第二天 — Mui Ne:大虾、螃蟹与晨间汤面

    清晨:Co Giang村与Bun ca

    Mui Ne位于Phan Thiet镇以东约22公里处——沿海岸公路乘坐Grab约30分钟,或骑摩托车40分钟。一定要早点去。Nguyen Dinh Chieu路东端的渔村在凌晨5点渔船靠岸时就开始苏醒了。这不是为游客准备的表演;这是一个真正的作业船队,渔获直接运往海滩上的餐厅和买家。

    这里的早餐是“bun ca”——鱼汤米粉,上面铺着大块水煮鱼肉,旁边配上一勺发酵虾酱。码头附近的小店每碗收费25,000–35,000 VND。这是在海边开启一天的最佳方式。

    中午:地道的海鲜午餐

    Mui Ne的海鲜餐厅种类繁多,从摆着塑封菜单的游客陷阱到门前放着鱼缸的优质家庭经营餐厅都有。坚持选择后者。葱油烤沙塘鳢(ca bong)是当地特色菜——鱼肉清淡鲜美,不需要过多的调味。点上一盘蒜蓉炒空心菜和蒸米饭。在一家不错的中档餐厅,每人午餐预算控制在200,000–350,000 VND即可吃得很好。

    如果你想吃螃蟹,Mui Ne泻湖的泥蟹(cua len)是当地餐厅的采购来源。每公斤价格在300,000–450,000 VND之间,取决于季节;姜蒸做法最能保留其原汁原味。

    下午:乘车回家前的Banh trang nuong

    在离开之前,从背包客街附近的任何街头小摊买一份“banh trang nuong”。这是一种在木炭上烤制的米纸饼,上面铺着鸡蛋、葱花、虾皮和辣椒酱——每个15,000–20,000 VND,即买即吃。这是Mui Ne的标志性小吃,也是结束旅程的完美句点。

    从Phan Thiet乘坐下午的巴士返回Saigon(巴士每小时一班左右);傍晚时分你就能回到城市。

    实用贴士

    这次旅行的最佳时间是11月至次年4月——旱季,气温适宜,渔船队全面运营。如果可以,请避开6月至9月,因为Mui Ne会有明显的降雨,且部分海鲜不在季节。周末总餐饮花费,在吃得不错的前提下,每人500,000–700,000 VND是合理的预算。
