    清晨6点的古镇呈现出另一番景象。旅行团还在沉睡,拍照点空无一人,而从凌晨4点就开始忙碌的摊主们,此时已经快要卖完最抢手的食物了。如果你想体验当地人真正的饮食方式,这个时间段就是你的黄金窗口。

    Cao Lau — 必点的第一道美味

    “Cao lau”之所以成为Hoi An最著名的菜肴是有原因的,而清晨正是它最新鲜的时候。粗而略带嚼劲的面条——据说是由当地水井的水制成的——铺在五香猪肉片、一把豆芽、新鲜香草和用同样面团炸制的酥脆面块之下。汤汁很少,更像是一种酱料,它紧紧包裹着面条,而不是没过面条。

    在街头摊位,一碗的价格在35,000–50,000 VND之间。避开那些有塑封英文菜单和照片的店——去寻找那些位于Tran Phu街西侧、日本廊桥以北居民巷弄里的流动摊位。它们通常在凌晨5:45出摊,运气好的话,8:30就卖光了。

    Banh Mi — 依然是全国最好吃的版本

    关于越南(베트남 / 越南 / ベトナム)哪里的“banh mi”最好吃的争论到此为止,大多数吃遍全国的人都会告诉你,Hoi An胜出。这里的法棍面包皮更薄,比你在Hanoi或Saigon吃到的要酥脆得多。馅料组合——肉酱、猪头肉、腌萝卜丝和胡萝卜丝、新鲜辣椒、香菜——丰盛而不杂乱。

    Phung是最著名的摊位,早上7点就会排起长队。这里的banh mi(반미 / 越式法包 / バインミー)价格约为25,000–35,000 VND。每一分钱都花得值。但如果队伍已经排了六个人,那就往前走两个街区,找一个看起来一模一样的无名小摊——面包供应商相同,味道也相差无几。

    Banh Canh — 大多数游客错过的汤面

    “Banh canh”是一种浓稠的汤面,它不像cao lau(까오러우 / 高楼面 / カオラウ)或“mi quang”那样受到关注,但这正是你应该尝试它的原因。面条由木薯粉或米粉制成,口感滑爽且扎实,在浓郁的猪肉或蟹肉汤中依然保持劲道。在Hoi An,蟹肉版本(banh canh cua)非常普遍且味道极佳。

    去Thu Bon河对岸的An Hoi半岛区域的小巷里寻找它。一碗面30,000 VND起。你会坐在摩托车送货员和学生中间用餐,这才是品尝这道菜的正确氛围。

    Xoi — 真正能让你吃饱的糯米饭

    “Xoi”是当地人在需要快速补充能量时的首选早餐。在Hoi An(호이안 / 会安 / ホイアン),你可以在市场附近或北侧居民区外找到甜味和咸味两种版本的糯米饭摊位。

    咸味版本——xoi man——通常会撒上绿豆泥、炸红葱头和肉松或中式香肠。一份用香蕉叶包裹的糯米饭价格为15,000–25,000 VND。站着吃,或者坐在塑料小凳上,四分钟就能解决。完美。

    甜味版本则会加入芋头、花生或椰浆,如果你想吃点更像甜点而不是正餐的东西,它们同样出色。

    咖啡该怎么喝

    Hoi An有其独特的咖啡文化,且节奏缓慢。“越南咖啡(베트남 커피 / 越南咖啡 / ベトナムコーヒー)”在这里几乎总是滴漏式——一个小金属滴漏壶(phin)放在玻璃杯上,等你慢悠悠地看着它滴完。“Ca phe sua da”——加炼乳的冰咖啡——是默认选项,如果你没有特别要求的话,在炎热的天气里点这个准没错。

    如果想尝试更具本地特色的,Cam Pho街区周围的一些小型烘焙店提供来自中部高原(중부 고원 / 中部高原 / 中部高原)的本地豆子,做法简单纯粹。一杯咖啡的价格在20,000–35,000 VND左右。避开Nguyen Thai Hoc街上那些面向游客的咖啡馆——它们倒是不错,但价格翻倍,体验却减半。

    如果你是从Hanoi来的,想念蛋咖啡(에그커피 / 蛋咖啡 / エッグコーヒー),在这里你找不到正宗的版本——那是北方的特色。别让任何人向你兜售所谓的Hoi An风味蛋咖啡。

    Mi Quang — 虽然分量较重,但也有当地人早餐吃它

    “Mi quang(미꽝 / 广南面 / ミークアン)”严格来说属于更广阔的越南中部地区——这是一种带有姜黄色的面条,配有虾、猪肉、花生和少量浓郁的汤汁——虽然它通常作为午餐,但如果你仔细找,在早市也能见到。它的分量更大,比cao lau更顶饱,更适合那些即将开始漫长步行或工作一天的人。

    一碗价格为40,000–55,000 VND。Tran Phu街上的Hoi An市场有几家开门较早且靠谱的摊位。

    到底该去哪里找

    Hoi An中心市场是显而易见的锚点——摊贩们从早上5:30左右就会沿着河边摆摊。但更好的美食隐藏在后街以及向北通往Cam Ha的小巷里。你离灯笼店越远,价格就越实惠,当地人的排队队伍也就越长。

    对于xoi和banh mi,An Hoi夜市区域(早上6点前会转变为早市)有可靠的选择。至于汤面,Bach Dang街和Cam Nam桥之间的居民区值得你慢慢走走逛逛。

    实用贴士

    带上小额钞票——10,000和20,000 VND的纸币。大多数街头小贩在那个时间点找不开200,000 VND的大钞。早上6点到8点之间的窗口期是真实的:过了这个时间,最好的摊位就会卖光,而面向游客的店价格也会上涨。设好闹钟吧。
