    Hue 的居民对早餐有着不同寻常的执着。清晨6点,城市的侧街和室内市场就已经生意兴隆,到了9点,一半的摊位就已经收摊了。如果你错过了这个时间窗口,也就错过了这座城市最精华的部分。

    你首先应该知道的汤

    Hue 最著名的早餐汤是“bun bo Hue”——这是一种以牛肉和猪肉为底料的米粉汤,汤头加入了大量的香茅,并以浓郁的虾酱作为基底。它比 pho 更辛辣、口感更丰富,当地人会告诉你,这里的味道与全国其他任何地方都不同。他们说得没错。

    圆形的米粉口感筋道,汤底呈深红橙色,一碗地道的汤粉里会有切片的牛腱肉、一大块猪蹄,以及几片“cha”(一种口感扎实的越南猪肉饼)。桌上会摆满各种新鲜配菜——切碎的香蕉花、豆芽、刺芹、青柠角——随你喜好添加。

    想要品尝地道的一碗,可以去 Nguyen Du 街上的 Ba Do,大约早上5:30开门。预计花费 35,000–50,000 VND。Vi Da 区的 Banh Cong 是另一家拥有忠实邻里客群的老店。两家店在早上7点前都会坐满,所以请尽早前往,否则可能需要坐在塑料凳上排队。

    顺化风味的糯米饭

    “Xoi”(糯米饭)是这座城市早餐的低调主角。Hue 版本的糯米饭通常配有咸味配料:炸红葱头、绿豆泥、肉松或“ruoc”(干猪肉丝),再淋上一层薄薄的葱油。它由沿街的摊贩售卖,通常从早上5:30开始,直到卖完为止。

    一份糯米饭——用香蕉叶包裹,或者如果运气不好用泡沫盒装——售价为 15,000–25,000 VND。它非常管饱,站着吃两分钟就能解决,这也是街头骑摩托车通勤的人们最常吃的早餐。

    一些摊贩清晨也会按块售卖“banh chung”,尽管这在 Tet(春节)期间更为常见。如果专门想吃糯米饭,Dong Ba Market 附近的路段是一个可靠的寻味地。

    更清淡的选择

    并非所有的 Hue 早餐都涉及汤水或米饭。“Banh uot”——薄薄的蒸米皮,配上虾干、炸红葱头和一小碗清爽的鱼露蘸料——是一种受欢迎的清淡选择。它看起来像“banh cuon”,但没有卷起来;米皮是平铺的,吃的时候用筷子夹起,蘸着酱汁吃。

    从早上6点开始,可以在 Le Loi 街沿线和 Vy Da 区附近寻找 banh uot 小摊。许多摊贩也会同时售卖“banh beo”,这是一种装在小陶瓷碟里的蒸米糕,上面撒有虾仁和葱油。点上两三样不同的食物是常态——这是一种将早餐视为一系列小碟菜,而不是单一碗装的吃法。

    至于更像零食的选择,“banh mi”在城里的几个摊位也能买到,但 Hue 式的 banh mi 在这里通常不是主角。当地人如果早餐吃 banh mi,通常是为了赶时间,不会花太多时间慢慢享用。

    咖啡的地位

    Hue 有着真正的咖啡文化,比 Hanoi 或 Saigon 更安静,但也更从容。老一辈人倾向于喝“ca phe sua da”——加炼乳的冰咖啡,或者纯黑滴漏咖啡,坐在店面前的低矮塑料桌旁。

    Nguyen Dinh Chieu 街周边聚集了一批老派的“ca phe”店,它们在早上6点前开门,坐满了读报纸的退休老人和休息的摩托车司机。一杯咖啡的价格在 15,000–20,000 VND 左右。没人会匆匆忙忙。

    如果你想要稍微精致一点的环境,又不想去纯游客咖啡馆,Hung Vuong 街上的 Cong Ca Phe 营业时间稳定且价格合理,尽管客群偏年轻化。重点是坐下来,慢慢喝,看着这座城市在晨光中苏醒。

    实用路线

    如果你想像当地人一样吃早餐,这里有一个可行的顺序:早上7点前去一家 bun bo Hue 摊位——Nguyen Du 街上的 Ba Do 或者你住处附近的任何一家社区摊位。接着步行一小段路去寻找 banh uot 摊位,点上一两份。然后找一家路边咖啡馆,坐下来喝一杯 ca phe sua da,直到你准备好开始一天的行程。

    完整行程的总费用:70,000–100,000 VND。总耗时:如果你以正常速度进食,大约一个半小时。在这个时间段,这座城市的感觉截然不同——更凉爽、更不拥挤,也更少以游客的需求为中心。

    实用提示

    Hue 大多数最好的早餐摊位营业时间为早上5:30至9:00,卖完即止,而不是按时关门。几乎全部只收现金。如果某个摊位看起来关门了,看看摊主是否只是在后厨补货——许多摊主会在上午中段进行补给。
