    Saigon 从不需要一场精酿啤酒革命来让饮酒变得有趣。这座城市早已拥有自己的一套体系:冰镇啤酒、矮桌子、喧闹的交谈,以及比你喝完第一杯酒还要快上桌的下酒菜。精酿啤酒的兴起增添了新的层次,但那些塑料凳摊位在氛围感上依然胜出。

    这里“Bia Hoi”的真正含义

    “Bia hoi”——即每天酿造且不含防腐剂的新鲜扎啤——从技术上讲是北方的产物。Hanoi 拥有最经典的 bia hoi 街角。而在 Saigon(사이공 / 西贡 / サイゴン),类似的传统则体现在当地人称之为“bia tuoi”的地方,或者简称为扎啤角。在这里,Saigon Special、333 (Ba Ba Ba) 或 Tiger 啤酒桶每天运抵,以每杯 10,000–15,000 VND 的价格售卖。这种啤酒口感清淡、气泡足,并不追求复杂。重点不在于酒本身,而在于那张桌子、冰块、小吃,以及坐在你身边的人。

    Saigon 最密集的此类场所位于 Bui Vien 及其周边街道(第一区),尽管那条街游客气息过重。想要体验更地道的版本,可以前往第三区 Vo Van Tan 沿线的路边啤酒摊,或是 Phu Nhuan 边界附近的 Phan Dinh Phung 一带。在下午 5:30 下班高峰前找个凳子坐下,点上一轮酒,直接说要“do nhau”(下酒菜)即可。你会吃到厨房里现做的菜肴:烤串、水煮花生、辣椒盐炸豆腐,运气好的话还能吃到“nem chua”(发酵猪肉卷)。

    本地与游客的界限

    Saigon 的饮酒场景存在明显的地理分区,在规划行程前了解这一点很有必要。

    第一区——特别是 Bui Vien、Ly Tu Trong 以及 Ben Thanh Market 周边——是大多数游客和年轻越南专业人士聚集的地方。这里的酒吧更吵闹,啤酒价格在每杯 60,000–120,000 VND 之间,社交圈层非常国际化。虽然体验不错,但未必是“最 Saigon”的体验。

    第三区、Binh Thanh 区和 Phu Nhuan 区才是这座城市真正的饮酒地。这里的啤酒花园——即“quan nhau”风格,露天、覆盖着波纹铁皮屋顶并挂着串灯——供应着轮换的桶装啤酒和巨大的共享拼盘。六人一桌,两小时内包括餐食的消费大约在 400,000–600,000 VND。菜单通常是手写的,老板可能认识每一桌的客人。在这里,一瓶 Saigon Red 啤酒售价 20,000 VND,无论谁来点都是这个价。

    Saigon 的精酿啤酒:值得一试的选择

    精酿啤酒场景在 2015 年左右扎根,如今已发展得非常有趣,尽管仍集中在少数几个街区。

    位于第一区 Pasteur 街的 Pasteur Street Brewing Company 是最老牌的酒厂。他们的 Jasmine IPA 口感稳定;Cyclo Pale Ale 是入门级的绝佳选择。酒馆里的品脱啤酒价格在 80,000–120,000 VND 之间。周末晚上 7 点后这里会坐满,如果不想为了座位费口舌,建议早点去。

    位于 Ly Tu Trong 的 Heart of Darkness 氛围更喧闹,酒吧感更强,且经常轮换季节性酒头。他们的世涛(stout)在炎热天气下表现出色,虽然听起来反直觉,但喝上三口你就明白了。如果你想要精酿啤酒但又不想待在那种过于严肃的品鉴室里,这里是个好去处。

    如果想去离游客区远一点的地方,Winking Seal Beer Co. 在第二区(合并后称为 Thu Duc 市)经营着一家酒馆,吸引了外籍人士、归国越南人和当地居民。这里没那么刻意,更放松。价格相近——每品脱 80,000–100,000 VND——但路程筛选掉了大部分游客。

    啤酒配什么吃

    Saigon 的下酒菜绝非配角。小吃与酒同样重要,且有着特定的搭配讲究。

    “Banh xeo”——这种塞满虾、猪肉和豆芽的滋滋作响的米饼——与拉格啤酒是绝配。在任何有厨房的 quan nhau 点一份,用生菜包裹并配上香草食用。“Com tam”(碎米饭配烤猪肉)虽然严格来说是午餐,但在第一区和第三区的晚间啤酒摊也随处可见。烤猪排(suon nuong)边缘的焦香是让你再点一轮啤酒的最佳理由。

    至于精酿啤酒,Pasteur Street 和 Heart of Darkness 的 IPA 与任何含有鱼露的菜肴搭配都很好——苦味能重置你的味蕾。试着点一份“goi cuon”(鲜春卷)或一盘烤鱿鱼,这种组合非常稳。

    如果你在午餐时喝了“ca phe sua da (연유커피 / 越南冰咖啡 / ベトナムアイスコーヒー)”,并打算在下午 5 点切换到啤酒模式——Saigon 的节奏基本鼓励这样做——那么在啤酒摊附近买个“banh mi”填补两餐之间的空档,比任何东西都管用。

    实用贴士

    大多数当地啤酒摊没有英文菜单;指着邻桌点的菜点单在任何地方都适用。法定饮酒年龄是 18 岁,但在路边摊很少被检查。如果你骑摩托车,请注意城市里的酒驾检查是动真格的,罚款从 6,000,000 VND 起——还是叫个 Grab 回家吧。
