    Da Nang 并没有像 Hue 那样拥有标志性的“bun bo hue”,也没有像 Hoi An 那样出名的“cao lau”——但如果让当地人选出一道每天午餐都会出现的菜肴,那一定是“mi quang”。

    你看到的究竟是什么

    Mi quang (广南面) 是一种宽而扁的姜黄黄色面条,介于汤面和干拌面之间。Da Nang版本的汤汁明显比你在Hoi An吃到的要少——碗底通常只有三到四勺浓郁的虾肉猪肉汤,不足以淹没面条。这是刻意为之的,吃之前你需要将所有配料搅拌均匀。

    面条上通常配有带壳虾、五花肉片和半个水煮鹌鹑蛋。有些店会用鸡腿肉代替猪肉,或者两者兼有。最后会撒上一块酥脆的米饼(“banh da”)来增加口感。随餐附送的香草盘非常讲究:有香蕉花丝、薄荷、紫苏、豆芽和撕碎的生菜。把它们全部加进去吧。

    如何从容点餐

    Da Nang (岘港) 的大多数mi quang小店规模都很小,出餐极快,且专为熟客开设。菜单通常只是墙上的一两行字。以下是点餐流程:

    第一步: 坐下。店员会过来,或者你可以和他们对视,并用手指比出你们的人数。

    第二步: 他们会问“tom hay ga?”——要虾还是鸡肉?在提供混合配料的店里,你可以说“ca hai”(两者都要),通常只需多付5,000–10,000 VND。

    第三步: 大约四分钟后,面就端上来了,同时附带香草盘和米饼。用手将米饼捏碎撒在碗里,加入香草,挤入随餐提供的青柠汁,再加一小勺桌上的辣椒蒜蓉酱,然后用筷子将整碗面搅拌均匀再开动。千万不要不拌就吃——碗底的汤汁需要包裹住每一根面条。

    第四步: 如果想喝点什么,可以点一杯“ca phe sua da”。大多数mi quang店午餐时不供应酒精饮料。

    关于价格

    在当地小店,一碗标准的mi quang价格在35,000–50,000 VND之间。如果超过60,000 VND,你可能进了一家针对游客定价的店。如果味道确实好倒也无妨,但通常情况下,便宜的店反而更地道。

    Da Nang推荐去处

    Mi Quang Ba Mua — 19 Tran Binh Trong, Hai Chau区。这是当地人最推荐的店。早上7点开门,通常11:30就卖光了。虾肉猪肉面一碗40,000 VND。想有位子的话,最好在上午10点前到达。

    Mi Quang 1A — 1 Hai Phong Street,靠近Han River。这家店稍微偏向游客,营业到下午2点,招牌上有英文和越南文。如果你对纯本地小店不太适应,这里是一个很好的起点。一碗45,000 VND。

    Mi Quang Chu Cang — 280 Le Duan, Hai Chau区。一家安静的社区小店,鸡肉面做得特别好。营业时间为早上6:30至中午。价格约35,000 VND。

    这三家店距离Da Nang市中心都很近,距离Han River大桥都不超过3km。

    令人垂涎的亚洲海鲜汤面,配有虾和蔬菜,是美食爱好者的不二之选。

    几个容易让人困惑的小细节

    香草盘不是装饰品——请全部吃掉。Da Nang当地人吃面时用的香草量几乎是越南(越南)中部最多的,香蕉花的微苦与浓郁的汤汁搭配才是这道菜的精髓。

    汤汁少不是失误。初次尝试的游客有时会因为碗里汤太少而以为端错了,其实并没有。这就是Da Nang的风格。

    米饼很快就会变软。最后再捏碎它,并尽快吃完,否则它会变成糊状。

    如果你也会去Hoi An(会安),不妨也尝尝那里的mi quang,对比一下很有趣。Hoi An版本的汤汁通常更多,猪肉味也更重。两者没有谁更正宗之分。

    实用小贴士

    在Da Nang,mi quang属于早午餐。大多数专门店下午1点就关门了,好店往往在那之前就卖完了。如果你计划在城里进行美食之旅,建议在上午9点前先吃个“banh mi (越式法包)”,然后在上午10点左右去吃mi quang,赶在午餐高峰清空锅底之前。
