    Nem Lui in Hue: The Lemongrass Sausage Breakfast Worth Getting Up For

    Hue 的饮食习惯随时间而变,而“nem lui”——一种在炭火炉上烤制的柠檬草猪肉串——正是那种根据食用时间不同而风味迥异的菜肴。同样的肉串,同样的米纸,在早上8点和晚上8点吃起来完全是两种体验。

    什么是Nem Lui

    在讨论时间之前,先了解一下什么是nem lui:它是一种调味猪肉泥,包裹在柠檬草茎上,烤至尖端微焦。你会得到一盘肉串,配上一叠banh trang(米纸)、一盘新鲜香草(薄荷、紫苏、香蕉花、青香蕉)以及一小碗被称为“tuong lui”的花生猪肉蘸酱。你需要自己在桌上动手:撕开米纸,裹上肉串,然后将肉从柠檬草上滑入卷中。tuong lui比普通的花生酱更浓郁、更具泥土气息,带有一种发酵的余味,那种咸甜交织的口感是廉价旅游版本完全无法比拟的。

    大多数地方每串售价在5,000–8,000 VND之间。一个人吃六到八串再加饮料,总价大约在60,000–80,000 VND左右。

    早晨:不推荐

    Nem lui不是早餐。Hue的早晨属于“bun bo hue”——这座城市辛辣且充满柠檬草香气的牛肉米粉汤,以及“banh cuon”——蒸猪肉木耳米卷。在Cho Dong Ba附近的Tran Hung Dao市场边缘,确实有清晨售卖nem lui的小摊,但那时炭火炉还没烧热,香草因为隔夜存放而显得蔫软,tuong lui也往往没到最佳状态。你吃到的只是一盘“技术上合格”但毫无乐趣的食物。在Hue的早晨,还是留给汤粉吧。

    午餐:被低估的窗口期

    中午到下午2点是享用nem lui被低估的时段,也是吃起来最轻松的时候。炭火烧得正旺,香草是早市刚进的新鲜货,而且大部分游客都在别处——通常是在Khoai街排队吃“banh xeo”,或者前往Imperial Citadel参观。

    一个靠谱的午餐地点是位于Nguyen Binh Khiem街的Nem Lui Ba Do,从Huong河南岸步行即可到达。这是一家狭窄的店面,只有三四张桌子,由一位经营了十多年的女士打理。这里的tuong lui是自制的,比Pham Ngu Lao(Hue的这条,不是Saigon的那条)背包客街上的版本甜度更低。八串肉串、一盘香草加一杯tra da(冰茶,通常免费或5,000 VND),大约70,000 VND。她下午3点左右就关门了,如果肉串卖完了会更早。

    午餐时段吃nem lui很合适,因为你是把它当作正餐而非小吃。六串肉串配米纸足以让你饱腹。

    夜晚:最佳选择

    夜晚才是Hue享用nem lui最有文化氛围的时候。这道菜具有社交属性——在桌上动手卷制、分享香草盘、喝啤酒——这种节奏非常契合这座城市夜幕降临后的步调。沿着Huong河南岸平行的Chu Van An街,大多数专门的nem lui摊位要到晚上6:30左右才真正热闹起来。到了7点,炭火炉烟雾缭绕,人行道上摆满了塑料凳,你坐下不到三十秒,冰凉的Huda啤酒(当地拉格啤酒,每罐15,000–20,000 VND)就会送到你手中。

    Chu Van An街20–40号街区的小摊聚集区最稳定:四五家相邻的摊位菜单重叠,都供应nem lui以及“cha ram”(炸春卷,类似于其他地方所说的“cha gio”)和烤猪肉串。竞争保证了品质和公道的价格。在这些摊位,不要让任何人向你报价超过8,000 VND一串的nem lui——那是这里的价格上限。

    如果你想要一个稍微安静点的环境,Nguyen Dinh Chieu街上的Quan Nem Lui 99是一个可靠的备选。空间更大,价格略高(全套加饮料约90,000 VND),tuong lui味道不错但更标准化。如果周末Chu Van An街的摊位太挤,这里依然值得一去。

    注意事项

    柠檬草茎是不能吃的——它只是签子,不是食物的一部分。初次尝试的人有时会去啃它,然后纳闷为什么nem lui会被认为很好吃。卷之前,先把肉干净利落地滑下来。

    实用信息

    在Hue,乘坐xe om(摩托车出租车)或骑自行车都很方便——Chu Van An距离Dong Ba市场约1.5公里。大多数nem lui摊位没有英文菜单;指指邻桌的盘子完全行得通。Chu Van An的夜间摊位通常从晚上6点营业到10:30,大雨天会休息。
