    Saigon 的“Banh Mi”自成一派——法棍外皮更酥脆,抹上厚厚的肉酱(pate)和蛋黄酱,毫不吝啬地塞入腌萝卜丝和胡萝卜丝(“dua chua”),再配上大把香菜。相比你在 Hoi An 或 Hue 吃到的那种口感清爽的版本,这里的 Banh Mi 味道更浓郁,馅料也更扎实。以下是当地人真正会去吃的地方。

    为什么 Saigon 的 Banh Mi 与众不同

    首先是面包。Saigon 的法棍通常比中部那种空气感十足的法棍稍短、稍粗,捏一下能听到清脆的碎裂声。面包内部柔软,但不会像棉花一样。这种外壳能承载大量的馅料,且在半分钟内不会变软。

    这里的馅料配方也更慷慨:厚厚一层“cha lua”(越南扎肉)、切片冷肉或 thit nguoi(冷切肉)、自制肉酱、蛋黄酱或黄油、dua chua、新鲜黄瓜、辣椒片,再抓上一把香菜。有些店还会加个煎蛋。大多数店在肉酱上绝不吝啬。成品比 Hoi An 的版本更厚实,说实话,作为一顿正餐也更令人满足。

    值得专程前往的店铺

    Banh Mi Huynh Hoa

    地址:26 Le Thi Rieng, District 1。营业时间:约 14:30 至售罄(通常在 20:00 或周末更早)。价格:50,000–55,000 VND。

    这是标杆。Huynh Hoa 的名气很大,16:00 时排队的人龙就能绕半个街区,但它确实名副其实。面包是店里现烤的,整个下午都在补货。它的独特之处在于配比:肉酱层厚到从侧面就能看出来,而且他们使用的是多种冷切肉,而非单一肉类。买到后请立刻站在店外吃掉,它不适合外带。

    Banh Mi Hoa Ma

    地址:53 Cao Thang, District 3。营业时间:约 06:30 至 10:30。价格:35,000–50,000 VND(视馅料而定)。

    Hoa Ma 自 20 世纪 50 年代开始营业,是城中现存较古老的 Banh Mi 店之一。仅在上午营业。这里的招牌是 Banh Mi Op La——在标准馅料基础上加一个煎蛋——非常值得一试。店面是一个狭窄的商铺,摆着几张塑料凳,门前有一个炭火炉。点餐,坐下,开吃。上午过半就卖完了。

    Banh Mi Phuong (Saigon 分店)

    没错,Banh Mi Phuong 来自 Hoi An。Saigon 的分店(有几家,主要在 District 1 和 Binh Thanh)味道尚可,但主要是为了吸引那些已经熟悉该品牌的游客。面包更接近 Hoi An 风格:更轻、更蓬松、外壳没那么脆。如果你专门想寻找 Saigon 的特色,这家可以跳过。当地人不会为了它专程跑一趟。

    Banh Mi 37 Nguyen Trai

    地址:37 Nguyen Trai, District 1。营业时间:约 06:00–10:00。价格:25,000–35,000 VND。

    这是一家推车摊位,不是店面,周围办公楼的上班族很快就会把它围满。面包很扎实——外皮酥脆——价格在这一带非常公道。没有花哨的装饰。你得到的是 cha lua、肉酱、dua chua 和香菜。这就是全部,而且它比那些配置相同但价格翻倍的店要好得多。

    Banh Mi Ky

    地址:多家分店,最方便的是 8B Huynh Khuong Ninh, District 1,以及靠近 Ben Thanh Market 的区域。营业时间:约 06:00 至下午晚些时候。价格:30,000–45,000 VND。

    Ky 更像是一家社区小店,而不是目的地餐厅,这正是它值得一去的理由。肉酱是自制的,比 Huynh Hoa 的口感稍粗,分量稳定且不浮夸。如果你住在 District 1,想吃一顿不针对游客的早餐,这里是不错的选择。

    Banh Mi Thuy

    地址:106 Vo Van Tan, District 3。营业时间:约 06:30–11:00。价格:30,000–40,000 VND。

    District 3 的 Banh Mi 往往被低估了。Thuy 是一家小型的家庭经营店,吸引了周围街道的常客。这里的鸡蛋 Banh Mi(banh mi trung chien)特别棒——煎蛋、肉酱,再淋上一滴美极鲜酱油。这就是当地人坐在塑料桌旁,配上一杯隔壁摊位的 ca phe sua da 的吃法。

    避坑指南

    任何停在 Bui Vien 背包客街 50 米范围内的 Banh Mi 推车,都会向你收取游客价格(70,000–90,000 VND),而买到的三明治却比你在 District 3 花 35,000 VND 买到的更小、制作更粗糙。面包通常更软,肉酱更稀,整个制作过程追求速度而非质量。它并不难吃,但那不是 Saigon 的 Banh Mi。那是卖给不懂行的游客的 Saigon Banh Mi。

    实用贴士

    Saigon 大多数正经的 Banh Mi 店只在上午或下午晚些时候营业——请提前规划好行程。Huynh Hoa 是下午营业的例外。请准备好零钱(5,000–20,000 VND 面额);这份名单上的所有地方都只收现金。如果一家店在门口显眼处挂着英文菜单,那它很可能不是本文所推荐的那种地道版本。
