    Saigon 的“goi cuon”——由米纸包裹鲜虾、猪肉、米粉、生菜和薄荷制成——看起来简单,但如果做得不好,口感会大打折扣。米纸皮应该软糯而不粘牙,香草必须新鲜,而花生海鲜酱(hoisin)则需要有足够的风味和辣度来提升整体口感。以下是值得你驻足品尝的店铺,以及一个你可以直接略过的地方。

    Saigon 版春卷的独特之处

    越南北部和中部(베트남 / 越南 / ベトナム)也有鲜春卷,但 Saigon 的标志在于蘸酱。在北方,蘸酱通常是以鱼露为基底的 nuoc cham;而在 Saigon,你几乎总是能吃到一种浓稠的花生海鲜酱(有时被称为“tuong”),上面撒着碎花生和一片新鲜辣椒。这里的春卷通常个头更大,香草填充更丰富,厨师还经常在标准的白灼虾之外加入一片五花肉。

    Quan Goi Cuon Ba Dong — 第一郡

    是的,这是一家游客餐厅。是的,价格是街头摊位的三四倍。但 Ngon 的庭院环境将全国各地的美食汇聚一堂,对于刚到 Saigon 还在适应环境的第一天来说,这是一个合理的入门选择。这里的 goi cuon(고이꾸온 / 越南春卷 / ゴイクオン)制作精良——香草填充均匀、米纸干净、酱料出色,且有英文菜单,减少了沟通成本。去的时候只需明白你支付的是环境和便利,而不是地道感。不要把它作为衡量这种小吃的基准。

    Nguyen Thuong Hien 的街头摊位 — 第三郡

    地址: Nguyen Thuong Hien 街,位于 Vo Thi Sau 和 Nguyen Dinh Chieu 之间
    营业时间: 15:00–21:00
    价格: 每个 7,000–9,000 VND

    这段路是上班族下班回家的必经之地。大约 300 米的范围内有四五个摊位轮流营业,价格是市中心附近最便宜的。春卷比餐厅里的要小——更像是零食而非正餐——香草填充也较少。但每个仅需 7,000 VND,你可以把整条街吃遍也不会心疼。建议在 17:00 后前往,那时下班人群涌入,高周转率保证了食材的新鲜。

    Goi Cuon Song Huong — 平盛郡 (Binh Thanh)

    地址: 52 Ung Van Khiem, Binh Thanh
    营业时间: 9:00–20:30
    价格: 每个 11,000–14,000 VND

    虽然不在第一郡的旅游路线上,但如果你前往平盛郡或从 Thu Duc 方向经过,这里值得一试。Song Huong 提供一种用“cha lua”(越南猪肉香肠)代替五花肉的版本,这使得春卷的口感更紧实、更有烟熏味。这是一种不寻常的变体,比肥腻的五花肉版本口味更清爽。花生酱也很好——咸味多于甜味,这是大多数行家更喜欢的口味。

    避坑指南

    聚集在 Bui Vien 步行街(背包客街)游客区附近的 goi cuon 小摊,几乎全都可以直接略过。这些春卷都是提前几小时包好放在玻璃柜里的,这意味着米纸会变硬,香草会枯萎。价格却高达每个 20,000–30,000 VND,品质远不如往北走两个街区的地方。酱料通常是用水稀释过的瓶装酱。如果你已经在 Bui Vien 享受夜生活,那没问题——但不要在这里买 goi cuon,因为你只需步行 10 分钟就能到达第三郡吃到更好的。

    搭配建议

    Goi cuon 与一份“banh mi”或一碗“bun thang”搭配非常合适,如果你想把它作为轻食午餐的一部分,而不是单一的零食。大多数做 goi cuon 的摊位也卖“cha gio”(炸春卷)——点一份鲜春卷和一份炸春卷,对比同样的馅料在不同烹饪方式下的口感,是花 50,000 VND 和二十分钟的好方法。

    至于饮品,街头摊位的“ca phe sua da”是 Saigon(사이공 / 西贡 / サイゴン)的标配:咖啡的苦味可以中和花生酱的甜腻,而不会掩盖春卷中香草的清新。

    实用提示

    这里列出的大多数摊位只收现金;请准备好小额钞票(5,000–20,000 VND 面额)。高峰时段是 11:00–13:00 和 17:00–19:00——如果你想有座位,请避开这些时段。如果春卷皮是不透明的白色而不是半透明的,说明米纸要么放久了,要么质量很差;半透明度是你下单前可以快速检查新鲜度的方法。
