位于Nguyen Phuc Chu街的Banh Dap Ba Lanh(跨过Thu Bon河,距离古镇中心约1.5公里)是当地人首推的店。这是一家低矮的店面,通常在下午2点到7点营业。一份两到三张饼的价格在15,000–20,000 VND之间。这里的mam nem有着浓郁的菠萝基底,使其不会只有单一的鱼腥味。
在靠近古镇的地方,Tran Hung Dao沿街以及Tran Phu市场附近的一些摊贩偶尔会把banh dap作为“banh canh”等米制小吃的配菜出售,但该区域的出品不太稳定,且酱汁往往为了迎合游客口味而稀释了。
如果你想找个更悠闲的环境,Bach Dang河岸沿线的街头摊位有时在傍晚也会供应banh dap,尤其是在周末。价格通常在每份10,000–15,000 VND。

这是初次尝试者最容易犯难的地方。大多数banh dap摊位并没有正式菜单。你坐下后,店主通常会直接端上食物。基本流程如下:
不用担心点错。专门的banh dap摊位菜单上本质上只有这一样东西,你不会搞混的。
这听起来很简单,但人们常会弄错:用双手握住叠好的饼,用力合拢,让顶部的脆饼碎裂并嵌入底部的软米纸中。不是轻轻按压,而是真正受控的“拍”。烤米饼的碎片会留在软米纸内,软米纸充当了包裹的作用。将折叠后的边缘浸入mam nem中,立即食用。脆饼在接触水分三十秒后就会变软,所以速度很重要。
如果你搭配香草食用,可以在蘸酱前塞一片紫苏或薄荷叶进去,这能中和酱汁的浓郁感。

Banh dap是下午到傍晚的小吃。大多数专门的摊位在下午1:30或2点左右开门,7点前就会卖完或关门。不要指望在早餐时段吃到它。尤其是Ba Lanh店,周末下午6点左右烤饼就可能卖完了,所以下午3–4点是比较稳妥的时间段。
如果你计划在Hoi An探索美食——如果你已经读过我们关于cao lau(까오러우 / 高楼面 / カオラウ)或mi quang的介绍,就知道这里有很多值得一吃的东西——不妨留出一个下午去河的南岸。Banh dap非常适合作为晚餐前的下午茶。
带好小额钞票:10,000和20,000 VND面值的纸币。大多数banh dap摊贩找不开200,000 VND的钞票。这道小吃几乎只收现金。如果某家店的mam nem味道平淡或过甜,换一家试试——不同摊位酱汁的差异比你想象的要大,多走十分钟找到一家发酵风味浓郁的店是非常值得的。
