    Saigon 真正的 banh mi 较量

    去哪里吃

    Banh Mi Hoa Ma(第一郡)

    这个小推车在 Ly Tu Trong 街上营业,靠近 Nguyen Hue 大道的拐角处,营业时间从早上 6:30 到下午 1 点左右。它在那里开得足够久,根本不需要固定的店面。老板自制肉酱(pâté)——你可以看到它摆在玻璃柜里——而面包则由隔壁第三家供应商新鲜送达。一份经典的肉酱和猪头肉 banh mi 售价 35,000–40,000 VND(约合 1.50–1.70 美元)。工作日早上的队伍通常只有一两个人。懂行的人自然知道它的好。

    Hoa Ma 的与众不同之处在于:蛋黄酱与肉的比例堪称建筑学般的精准。面包烤的时间恰到好处,外皮酥脆,内里却依然柔软。

    Banh Mi 25(Ben Thanh / 第一郡)

    这家店确实在游客的雷达上,但这是有原因的。Banh Mi 25 位于 Ngo Duc Ke 街(Ben Thanh Market 以西一个街区),早上 6:30 营业,中午关门。老板是第二代传人;他的母亲在 20 世纪 90 年代就在这里经营 banh mi 摊位。他从第七郡的一家特定面包店采购法棍——你能尝出其中的不同。这里的面包比大多数地方的更咸,内部组织也更紧密。

    推荐点“banh mi thit nuong”(烤肉口味):40,000 VND。猪肉用香茅和少许鱼露腌制,然后在柜台可见的小型桌面烤架上烤至焦香。腌白萝卜和胡萝卜每天早上新鲜切制,绝非批量生产。根据肉类不同,价格在 40,000–50,000 VND 左右。

    缺点是:它离市场很近,所以你会看到其他游客。但品质绝对是货真价实的。

    Banh Mi Saigon(第三郡)

    在 Tran Hung Dao 街上,一座天主教堂对面,这是一家不起眼的苍蝇小馆,每天大概只卖三十个三明治就售罄了——通常在早上 10 点前。没有店面招牌。只有当地人知道。老板是一位年长的女性,已经经营了二十多年。她使用肉酱、猪头肉和越南火腿(“gio”)的组合,再加上带有淡淡香菜味的特制香草蛋黄酱。

    价格:30,000–35,000 VND。你可以站在狭窄的柜台前吃,也可以打包带走。这里的面包比 Hoa Ma 或 Banh Mi 25 的稍软一些,有些人更喜欢这种口感。工作日早上通常会排起小长队;周末到早上 8:30 就会挤满人。

    Banh Mi Ngo Huong(第四郡 / Can Tho 街区)

    这个小推车位于 Saigon (사이공 / 西贡 / サイゴン) 河南岸住宅区的 Le Van Sy 街上。它不在主要的旅游路线上——你必须特意前往。早上 7 点左右营业,11 点前关门。老板已经六十多岁了,他用来自 Dalat 的配方自制肉酱。价格:35,000–45,000 VND。

    Saigon banh mi 的独特之处

    与 Hanoi 或 Da Nang 相比,Ho Chi Minh City (호치민시 / 胡志明市 / ホーチミン市) 的三明治更加厚实,蛋黄酱的味道也更突出。这座城市的越南人、华人和中国社区都对其风格产生了影响——你会发现这里的猪头肉和猪肝酱比北方多得多。Hanoi 在配料上倾向于更清爽、更轻盈的做法。而 Saigon 则是满满当当的丰富。

    面包的品质是关键。一个好的 banh mi 的成败取决于法棍。上面提到的大多数店铺都从同样的三四家小面包店进货,这也是它们具有竞争力的原因。而平庸的 banh mi——比如你在 7-Eleven 或专坑游客的连锁店里找到的那种——使用的是隔夜面包和一直装在挤压瓶里的蛋黄酱。两者的差价可能只有 5,000 VND,但吃起来完全是两码事。

    如何点单以及何时前往

    上述所有店铺都采用“所见即所点”的模式。指着肉说:“Thit nuong”(烤肉)、“gio”(越南火腿)或“pate”(猪肝酱)。大多数地方会问你是否需要加热烤制——如果需要,就说“hot nuong”。他们会在你面前组装好,用纸包起来,然后递给你。

    时机就是一切。早上 6:30–8 点是黄金时间。你可以避开上班族的高峰期,面包保证新鲜,配料也不会从天亮一直放到现在。到了上午 10 点,比较好的店铺就开始缺货了。到了中午,你就只能捡漏了。

    晚餐时不要点 banh mi。这在 Saigon 并不流行。如果你晚点想吃三明治,那你来错城市了;不如去吃份碟饭(rice plate)吧。

    价格预期

    在 Ho Chi Minh (호치민 / 胡志明 / ホーチミン) City,地道的 banh mi 价格在 30,000–50,000 VND(1.25–2.10 美元)之间,具体取决于肉类以及你是在小推车还是小店面购买。在更高级的地方,带有优质馅料(加肉、加蛋)的 banh mi 可能会达到 60,000 VND,但这已经超出了“本地人”的价格区间。Ben Thanh Market 附近或 Bui Vien 街上的游客陷阱会收取 80,000–120,000 VND 的高价,给你的却是劣质产品。

    实用提示

    早点去,空着肚子去,别指望能坐下来好好吃一顿。这些都是即买即走的生意,当地人通常站着或边走边吃。带上零钱(面额 20,000–50,000 VND 的纸币);找零可能会很慢。大多数地方不接受刷卡,不过随着 Momo 和银行转账的普及,这种情况正在改变。如果一家店在中午前就卖光了,说明他们确实有两把刷子——这正是你找到了真正地道的 banh mi 目的地,而非专为游客提供便利的快餐店的标志。
