    你在地图应用程序上看到的芽庄(Nha Trang)餐厅都不错,但它们大多不是当地人吃午餐的地方。真正的美味隐藏在 Nguyen Thien Thuat 街的巷子里、Dam Market 的后角,以及那些没有招牌、没有菜单、当然也没有二维码的民宅前——那里的女主人三十年来一直做着同一种汤。

    并不是因为它们是秘密,而是因为常客们从未想过要写下什么。这些摊位大多只卖一种菜品,营业时间仅四个小时,客源也仅限于步行距离内的居民。厨师不会说英语,不欢迎随意闯入的游客,而且无论如何,上午 10 点前就会卖光。他们没有动力去寻求曝光,而这恰恰是一个好迹象。

    如果你想找到它们,你需要放慢脚步,留意在非高峰时段摩托车聚集的地方、塑料凳摆到人行道上的地方,以及你看到建筑工人和摩托车司机(xe om)在用餐的地方——而不是游客聚集的地方。

    去哪里寻找以及寻找什么

    Dam Market 后排

    Dam Market (Cho Dam) 通常被当作纪念品购物点。忽略前排的摊位,穿过内部的湿货市场区域,转向面向 Phan Boi Chau 街的后排。在早上 6 点到 8 点之间,会有四五位女性支起便携式炉灶,每人只用一口锅。其中一位制作“bun ca”——使用新鲜军曹鱼或鲭鱼制作的鱼汤米粉,每碗约 25,000–30,000 VND。另一位则制作“banh canh cha ca”,这是一种带有鱼饼的粗米粉汤,是越南中部沿海地区的特色。两家店都没有名字。指着锅,伸出手指表示要几碗,然后坐在她们示意的地方即可。

    这些摊位在上午 9:30 之前就会收摊。请趁早空腹前往。

    Nguyen Thien Thuat 街 4 号巷

    Nguyen Thien Thuat 是一条主干道,但其巷弄深处别有洞天。4 号和 6 号之间的狭窄通道(当地人称之为 hem 4)通向一个小院子,一家人就在一楼经营早餐生意。他们制作的“banh mi”有着你在游客咖啡馆里找不到的馅料:慢炖猪皮和柠檬草酱,上面撒着腌制的青木瓜。一个 banh mi 售价 15,000 VND。他们还提供鸡肉粥——“chao ga”,如果你前一天晚上吃海鲜吃多了,这绝对是你最想来上一碗的。

    这里没有招牌。辨认标志是横跨巷子入口的一块蓝色塑料布,以及一位可能理会你、也可能不理会你的老妇人。坐下吃就是了。

    Phu Dong 街晨间摊位

    Phu Dong 街与海滩平行,但在内陆几个街区,Tran Phu 街和 Lo Duc 街之间的路段有一小排早餐摊贩,他们利用摩托车后座和折叠桌经营。一定要找那位卖“mi quang”的摊主——这种姜黄色的面条通常与 Da Nang 和 Hoi An 联系在一起,但在这里制作时带有明显的沿海特色:加入虾干、花生,汤汁比中部版本更清淡。售价 35,000 VND,配有一堆新鲜香草和一片米饼。他每天早上 6:30 左右出摊,直到卖完为止,通常在 9 点左右。

    傍晚的芽庄大教堂附近

    芽庄大教堂(Nha Tho Nui)周边地区在傍晚时分会变得繁忙,当地人下班后会来这里觅食。下午 5 点左右,一位女士会在 Thai Nguyen 街和 Nguyen Trai 街的拐角处摆摊,售卖“nem chua”——用香蕉叶包裹的发酵猪肉卷,配以大蒜和辣椒。这些都是自家制作的,而非批发,从口感上就能吃出来。四卷 20,000 VND。她还会搭配从小型冷藏箱里倒出的“bia hoi”——当地生啤,每杯 10,000 VND。这就是芽庄最纯粹、最接地气的夜晚。

    如何在语言不通的情况下沟通

    指手画脚很管用。在手机上展示菜品照片也行。用“mot”(一)或“hai”(二)来表示数量会让你事半功倍。如果你在一家只卖一种菜的摊位,甚至不需要点餐——坐下,一碗面自然会端到你面前。

    准备好小面额钞票。这些摊贩很少有 200,000 VND 面额的零钱,而且他们会把不便写在脸上。钱包里装满 20,000 和 50,000 VND 的纸币会让一切变得更顺畅。

    拍照前先观察环境。有些摊主不介意,但有些人会觉得这很无礼。一个微笑和询问许可的手势会大有帮助。

    预期(与接受)

    没有英文菜单,没有饮食调整选项。座位有限,你可能需要与陌生人拼桌。有时你可能不确定汤里到底是什么。这些都不是问题——这只是当地的常态。这些食物比 TripAdvisor 上大多数餐厅的食物更新鲜、制作更用心,因为这些厨师多年来每天早上只做这一道菜。

    有时摊位可能不会出现。有人生病了、下雨了,或者家里有事。这就是现实。明天再来吧。

    实用贴士

    这些地方大多在早上 6 点至 10 点或下午 5 点至 8 点营业——在此期间很少有符合这一类别的摊位。骑摩托车或自行车会让寻找过程更容易;芽庄的街头美食地理环境更适合漫游,而不是按图索骥。准备 50,000–80,000 VND 的预算,就能享用一顿丰盛的早餐(包括从附近街头小贩买的咖啡),你吃到的将是这座城市里最地道的美味。
