    Banh Khoai in Hue: The Crispy Breakfast You're Probably Walking Past

    Quang Ngai 位于 Da Nang 以南约 130 公里处,Quy Nhon 以北 175 公里处——由于距离这两地都很近,大多数旅客往往会直接坐火车呼啸而过。这是一个错误,尤其是在美食层面上的遗憾。该省有两道菜会让当地人争论不休,甚至为此“面红耳赤”:Don 汤和 Com ga(鸡肉饭)。这两道菜都不张扬,但都值得你特地绕道一试。

    这道菜的味道设计得非常含蓄。Don 汤不会给你强烈的味觉冲击,而是层层递进。蛤蜊带有一种淡淡的矿物质清甜,花生增加了口感,而 rau ram 则化解了任何可能存在的油腻感。大多数店里的一碗售价在 20,000–30,000 VND 之间。吃的时候要趁热,最好搭配一份 banh trang nuong(烤米纸)用来舀汤。

    Quang Ngai 市最好的 Don 摊位聚集在 Tra Khuc 河岸边以及 Hung Vuong 街附近的市场区域。寻找那些早上 5:30 或 6 点就开门的店——Don 是一种早餐食物。到了早上 9 点,好的摊位往往就卖光了。

    为什么它没有流传开来

    Don 不易运输。蛤蜊是当地捕捞的,极易变质,而且这道菜依赖于当天早上现熬的汤底。你在 Hanoi 或 Saigon 找不到任何还原度接近原版的 Don。这在某种程度上也让它保持了独特的魅力——它是中部海岸仅存的、最地道的饮食体验之一。

    Com Ga:Quang Ngai 对中部鸡肉饭的回应

    “Com ga”——鸡肉饭——是一道遍布越南中部的菜肴,从 Hoi An 的名店版本到 Hue 和 Da Nang 的小众变体,随处可见。Quang Ngai 的版本比北部地区的风格更接近 Hoi An,但它拥有自己独特的个性。

    米饭是用鸡汤和姜黄烹制的,呈现出金黄色,并带有一种淡淡的咸鲜味。鸡肉通常是城外山里散养的走地鸡,煮熟后手工撕成丝(绝不用刀切,这对口感至关重要)。鸡肉堆在米饭上,配以一团切碎的青木瓜或香蕉花丝、撒上炸红葱头和新鲜香草。蘸酱是各家的秘诀:一些 Com ga 店使用纯粹的 nuoc cham,另一些则加入姜末,还有一些会加重蒜味。鸡肉的品质和酱汁的调配,是区分一份普通鸡肉饭和顶级鸡肉饭的关键。

    一份标准的鸡肉饭价格在 40,000–65,000 VND 之间,具体取决于分量以及你是否额外加肉。Quang Ngai 市的大多数 Com ga 餐厅仅供应午餐,大约上午 10 点开门,卖完即止——通常下午 1 点或 2 点就关门了。

    Le Trung Dinh 街和中心市场 (Cho Quang Ngai) 周围是 Com ga 店最集中的区域。当地人对哪家最好各有坚持;但诚实地说,其中三四家都非常出色,彼此之间的差距微乎其微。

    作为美食之地的 Quang Ngai 市

    这座城市本身是一个务实的省会——它不像 Hoi An 或 Hue 那样是旅游胜地。这里没有古色古香的步行街,没有裁缝店,也没有灯笼。它所拥有的是一种尚未为外来口味做出妥协的饮食文化。你在这里吃到的 Don,和 Quang Ngai 当地人上班前吃的早餐一模一样。这就是它的魅力所在。

    如果你正乘火车游览中部海岸,Quang Ngai 有一个正规的火车站,向北可达 Da Nang(约 2.5 小时),向南可前往 Quy Nhon 及更远的地方。安排一次过夜停留——或者如果行程允许,哪怕是 4 小时的中转——也足以让你在同一天内品尝到 Don 和 Com ga。

    至于餐间的咖啡,越南中部那种浓郁的冰滴咖啡(“ca phe sua da”)在这里非常普遍,市场附近的一些老式咖啡馆依然坚持用炼乳缓慢滴滤,保留着最正宗的做法。

    实用贴士

    Don 是早餐,Com ga 是午餐。如果你只是短暂停留几个小时,请相应地规划行程——争取在早上 7 点前到达吃 Don,然后在上午 11 点左右转场去吃 Com ga,以免最好的店卖光。大多数摊位只收现金;200,000–300,000 VND 足以覆盖一个人一上午的全部饮食,甚至还有剩余。
