    越南(Vietnam)的饮品文化已悄然成为东南亚最有趣的领域之一——这不仅是因为这里的咖啡品质极佳,更因为新一代的调酒师和烘焙师正在利用本土食材进行创新,而这些尝试在国际上尚未得到足够的关注。这条路线从南向北,全程五天,涵盖了你熟悉的两个大城市以及途中的几个站点。

    第1天 — Saigon:基准线

    抵达 Saigon 后,先别急着做任何事,去喝杯咖啡吧。这座城市的第三波精品咖啡浪潮主要集中在第1区、第3区和 Binh Thanh 区。从 Nguyen Thi Minh Khai 街上的一家精品烘焙店开始你的旅程——在这里,一杯澳白(flat white)的价格大约在 65,000–80,000 VND 之间,这足以让你了解这里的消费水准。

    下午,去品尝一下经典之作:“ca phe sua da”,即加了炼乳的冰咖啡。建议去那种摆放着塑料凳的小店,而不是设计感十足的咖啡馆,这种反差感正是体验的精髓。在 Bui Vien 和 De Tham 之间的第1区后街,依然能找到这种店——寻找那种放在冰块玻璃杯上的金属滴漏壶(“phin”)。

    晚上是鸡尾酒时间。Saigon(西贡)的精酿酒吧文化起步很晚,但充满创意。Bui Vien 和 Pham Ngu Lao 走廊附近的几家酒吧巧妙地使用了当地食材——金桔、斑斓叶、小柑橘、越南威士忌——这些搭配不仅是噱头,而是真正地提升了风味。在正规的酒吧,每杯鸡尾酒的价格预计在 120,000–180,000 VND 左右。第1区的屋顶酒吧环境不错,但价格偏向游客;真正的鸡尾酒佳作往往藏在街头。

    第2天 — Da Nang:中转与停留

    从 Saigon 飞往 Da Nang 的航班大约需要 75 分钟。Da Nang 本身并非咖啡目的地——向南 30 公里处的 Hoi An 才是——但如果你在中午前抵达,Da Nang 韩江(Han River)沿岸还是有几家不错的独立咖啡馆值得一坐。

    Da Nang 的“越南咖啡(Vietnamese coffee)”通常指浓郁的深烘焙罗布斯塔咖啡,盛在小瓷杯里热饮。穿过中央高地的罗布斯塔咖啡带供应了全国大部分的产量。Da Nang 的咖啡馆倾向于直接供应,不加修饰,这很诚实。

    下午早些时候,乘车前往 Hoi An(会安)。沿海公路车程约 40 分钟。

    第3天 — Hoi An 和 Hue:慢咖啡,烈酒

    Hoi An 的古镇虽然游客密集,但其咖啡文化却出人意料地保持得很好。一些烘焙师在 Tran Phu 和 Nguyen Thai Hoc 街的店屋里安了家,品质比你预想的要高得多。Hoi An 也是在 Hanoi 之外尝试“ca phe trung”(蛋咖啡)的好地方,一些店铺对其进行了改良。

    在 Hoi An 度过上午,然后乘车或巴士前往 Hue ——全程约 120 公里,穿过 Hai Van Pass 需要两到两个半小时。这段车程绝对值得。

    Hue(顺化)在饮品方面被低估了。这座城市在香江(Song Huong)附近有几家低调的鸡尾酒吧,过去几年也开了不少精酿啤酒吧。更有趣的是 Hue 独特的咖啡文化:这座城市有着比第三波咖啡运动早几十年的“慢坐”咖啡馆传统。在皇城北部的住宅区找一家花园咖啡馆(“quan ca phe vuon”),多坐上一个小时吧。

    在 Hue,晚餐几乎是必修课——“bun bo hue(顺化牛肉粉)”,这道辛辣的牛肉米粉每碗约 40,000–60,000 VND,其风味与越南其他任何地方都截然不同。

    第4天 — Hue 到 Hanoi:夜行火车

    预订从 Hue 到 Hanoi(河内)的 SE 列车软卧。这段夜间旅程大约需要 14 小时。根据舱位和季节,价格约为 500,000–700,000 VND,这是一种非常愉快的旅行方式——记得带上零食,餐车功能齐全但没什么惊喜。

    上车前,利用下午的时间再打卡一家 Hue 的咖啡馆。过去几年,Hung Vuong 街附近开了几家精品店。可以向当地人打听,因为这里的咖啡圈更新速度比任何出版的榜单都要快。

    第5天 — Hanoi:北方的咖啡痴迷

    Hanoi 对咖啡的执着有一种近乎私人的情感。老城区和还剑湖区域的咖啡馆密度惊人——有些路段每条街区就有五六家——从古老的家族经营店到精致的精品店应有尽有。

    第一站必须是“蛋咖啡”——“ca phe trung(蛋咖啡)”——它于 20 世纪 40 年代由 Hang Gai 街的 Cafe Giang 发明,至今仍以 25,000–30,000 VND 左右的价格供应。它是将搅打过的蛋黄和炼乳泡沫覆盖在罗布斯塔咖啡上,可热饮也可冰饮。听起来很奇怪,但喝起来就像是一种能让你清醒过来的甜点。第一次尝试,去位于狭窄楼梯之上的 Giang 原店是最好的选择。

    上午可以沿着老城区的咖啡路线漫步——藏在 Hang Gai 街一家丝绸店后面的 Ca Phe Pho Co 拥有城中最好的湖景之一。然后前往法国区,那里有 Hanoi 最好的精品烘焙店,许多都开在 Trieu Viet Vuong 和 To Ngoc Van 街及其周边。

    晚上先去喝“bia hoi”——在街角供应的生啤,每杯约 7,000–10,000 VND,没有任何矫揉造作——然后再去喝鸡尾酒。Hanoi 的精酿鸡尾酒吧成熟得很快。Truc Bach 湖附近和 Tay Ho 区的一些酒吧正在尝试将当地烈酒、“莲花茶”浸泡液和时令水果结合,如果你的行程充裕,非常值得多留一晚。

    实用贴士

    如果你每天在街头咖啡和一两家鸡尾酒吧之间切换,建议每天预留 300,000–500,000 VND 的饮品预算——在 Hanoi 和 Saigon,酒吧账单会增加得很快。Saigon 到 Da Nang 的机票提前两到三周预订最便宜;Hue 到 Hanoi 的火车票在周末会售罄,所以一旦确定日期,请尽快在线预订。一张带有流量的当地 SIM 卡是你唯一真正需要的后勤工具。
