    大多数人通过路边摊的滴漏壶接触到“越南咖啡”。但很少有人会追溯到它的源头——那些山坡上的农场、处理站,以及那些正在培育出足以挑战哥伦比亚或埃塞俄比亚咖啡风味的实验性地块。这份行程正是为此而设计,在10天内带你走访四个独特的咖啡产区。

    第1–2天 — Hanoi:基准与出发点

    在向南前往高地之前,先花两天时间在Hanoi调整你的味蕾。这座首都城市是世界上最适合了解越南咖啡文化在街头如何运作的地方之一。你可以尝试几种不同的风格:在Dinh Tien Hoang街的塑料小凳上喝一杯“ca phe sua da”(炼乳冰咖啡),然后去Nguyen Huu Huan街的Cafe Giang品尝一杯“蛋咖啡”——这是1946年开业的老店,至今仍由同一家族经营。不要过度美化蛋咖啡,它其实是一种能填饱肚子的冬季饮品,但它体现了越南人在原材料有限的情况下展现出的独到匠心。

    Hanoi也有一些值得关注的小型精品咖啡店。去Tay Ho区逛逛那些烘焙坊——有几家从中部高地(Central Highlands)进口生豆,并提供手冲咖啡,让你在前往产区之前就能对比品尝Buon Ma Thuot的罗布斯塔(Robusta)和Da Lat的阿拉比卡(Arabica)。

    第2天晚上,从Hanoi乘坐飞机或卧铺火车向南出发。

    第3–4天 — Son La:越南被低估的北部咖啡带

    Son La省位于西北部海拔700至1,200米处,出产着几乎不为越南境外所知的阿拉比卡咖啡。这正是它值得一游的原因。你可以从Hanoi飞往Son La(飞行时间约45分钟,往返票价约1,200,000–1,800,000 VND,视时间而定),或者从My Dinh车站乘坐夜班巴士,经过约七小时车程抵达Son La镇。

    这里的农场规模较小,不像中部高地那样商业化,这正是其魅力所在。你可以向旅馆询问如何参观Muong La区附近的合作社——在收获季节(10月至次年1月),有些农场欢迎散客参观。你将看到包括Catimor在内的阿拉比卡品种,以及一些较新的Bourbon试验品种。这里的风景坦白说比Dak Lak更壮观:梯田山坡、少数民族村落小径,11月的早晨气温在12–14°C左右。

    如果想购买咖啡,Son La镇的早市有当地烘焙的咖啡豆,通常采用传统工艺,混合了黄油,有时还会加糖。在评价它们之前,不妨先尝尝。

    第5–6天 — Buon Ma Thuot:罗布斯塔之都

    位于Dak Lak省的Buon Ma Thuot贡献了越南约40%的咖啡产量。城市本身功能性强,算不上漂亮——宽阔的道路、摩托车行、仓库——但周边乡村才是你此行的目的。

    罗布斯塔在这里占据主导地位是有原因的:红色的玄武岩土壤和500–700米左右的稳定海拔非常适合它生长。与阿拉比卡相比,它的咖啡因含量更高,酸度更低,这就是为什么越南式的“phin”滴漏咖啡比大多数浓缩咖啡劲儿更足的原因。不要对罗布斯塔抱有偏见;来自Dak Lak农场、经过清洗和妥善干燥的顶级咖啡豆,风味其实非常复杂。

    位于Nguyen Tat Thanh街的Dak Lak咖啡博物馆提供了详实的背景知识(免费入场,游览约一小时)。之后前往农场参观。距离市中心约20–30公里的Ea Tul和Cuor Dang地区有几家庄园接待游客。可以通过酒店或当地向导安排;包含品鉴的农场游每人费用约为150,000–200,000 VND。

    傍晚时分,Buon Ma Thuot中心环岛附近聚集了一批过去五年内兴起的精品咖啡馆,其中一些由年轻的农场主后代经营,他们曾去过Saigon或Da Nang,学习了精品咖啡技术后回到家乡,利用自家产的咖啡豆进行创作。这些咖啡馆非常值得一去。

    第7天 — Cau Dat:改变行业认知的农场

    Cau Dat农场位于Lam Dong省的山坡上,海拔约1,500米,距离Da Lat约25公里。它是越南海拔最高的咖啡种植地之一,也是少数能生产符合国际标准的精品级阿拉比卡咖啡的地方。从Da Lat乘坐巴士或包车前往(在蜿蜒的山路上行驶约45分钟)。

    该农场规模很大,超过200公顷,自法国殖民时期就开始种植咖啡。目前的经营重点是使用水洗、日晒和蜜处理法加工的单一产地咖啡豆。周末上午提供导览服务;请提前通过官网预订或直接致电。在这里进行的品鉴飞行(Tasting flights)让你能够对比同一海拔、同一品种在不同处理法下的风味差异,这是你在越南能获得的最直观的咖啡教育。

    返回Da Lat的路上,道路沿着山脊延伸,两侧是松树林。可以在路边的摊位停下来,买一杯混合了Da Lat草莓的新鲜压榨甘蔗汁——20,000 VND一杯,虽然和咖啡无关,但你一定会想尝尝。

    第8–10天 — Da Lat:咖啡与美食的交汇点

    Da Lat是这条路线上最宜居的城市。1,500米的海拔使即使在旱季,气温也保持在20度出头,这座城市积淀的饮食和咖啡文化值得你放慢脚步去探索。

    上午可以去走访烘焙坊和咖啡馆:Nguyen Chi Thanh街的Phuc Long提供传统风味拼配,而Hoang Van Thu街附近较新的精品店则在尝试厌氧发酵工艺。Da Lat的阿拉比卡咖啡——特别是Typica和Bourbon品种——具有花香和明亮的特质,这会让那些期待Buon Ma Thuot罗布斯塔那种浓郁、深沉口感的人感到惊喜。

    下午则去品尝美食。Da Lat的饮食与越南南北方都有所不同:“banh trang nuong”(烤米纸,配有鸡蛋和虾干,约15,000–25,000 VND)、配有当地辣椒酱的“bun bo Hue”(顺化牛肉粉),以及中央市场热面包上抹的城市名产草莓果酱。Nguyen Thi Minh Khai街的夜市非常值得花一个晚上去扫街吃小吃。

    最后从Da Lat的Lien Khuong机场飞回家,该机场连接着Hanoi、Saigon(西贡)以及其他多个国内枢纽。

    实用建议

    进行这条路线的最佳时间是10月至次年1月——这是大多数产区的收获季节,农场正忙碌,也能买到新鲜加工的咖啡豆。除住宿和餐饮外,国内航班(Hanoi–Son La往返,Buon Ma Thuot–Da Lat往返)的预算约为每人8,000,000–12,000,000 VND。在Da Lat以外的地区请携带小额现金;农场和市场摊位很少支持刷卡。
