    海防距离Hanoi约三小时车程,给人的感觉完全是另一座美食之城。这里的港口文化底蕴深厚——螃蟹、蛤蜊、螺类和新鲜捕获的鱼类,以你在北方其他任何地方都无法尝到的方式呈现。

    Banh Da Cua — 定义这座城市的招牌菜

    "Banh da cua"(蟹肉米粉)是海防对汤粉的独特诠释。如果你只在Hanoi尝过,那只能算是平庸的模仿。这里的面条是粗而有嚼劲的深褐色米粉——banh da do——浸泡在浓郁的蟹膏汤底中,上面铺着真材实料的河蟹肉、猪排骨、cha ca(鱼饼),有时还会撒上酥脆的炸红葱头。这种汤底带有一种轻微的发酵鲜味,如果你习惯了pho那种清淡的汤头,可能需要一点时间来适应。

    吃Banh da cua的首选街道是 Hang Kenh 和 Le Loi,那里的小店从早上6点左右开始营业,直到卖完为止,通常10点就关门了。根据配料的不同,一碗的价格在35,000–50,000 VND之间。点餐时可以点一份“全家福”(day du),如果老板看起来好说话,不妨要求多加点蟹肉。

    如果你想找一家有正规后厨的坐店餐厅,Tran Phu街上 Cho Sat市场 附近的几家店非常可靠。工作日早上8点前去,你会发现自己和建筑工人和摩托车维修工坐在一起用餐——这才是最地道的氛围。

    Bun Ca Cay — 香辣鱼米粉

    "Bun ca cay" 大致翻译为香辣鱼米粉,与Hanoi口味温和的鱼汤相比,海防版的调味更加大胆。汤底以番茄为基调,呈橙红色,里面漂浮着大块炸鱼——通常是鳢鱼或鲤鱼——搭配米粉和一把新鲜莳萝。辣味来自于餐桌上现加的鲜辣椒,所以你可以自行控制辣度。

    大多数当地人推荐的最佳去处是 Nguyen Duc Canh街 上的一家无名小店,靠近与Lach Tray的交汇处。没有招牌,摆着四张塑料桌,早上6:30开门。一碗价格为30,000–40,000 VND。这里的炸鱼外皮酥脆,不会因为在汤里泡太久而变得软烂。

    Bun ca cay在海防是早餐食品。不要指望11点以后还能吃得到。

    Oc — 街头篮子里的螺类和贝壳海鲜

    海防的 "Oc"(螺类)文化非常讲究。作为一座港口城市,这里获取新鲜贝类的渠道非常便利。从下午4点左右开始,摊贩们会在 Bach Dang滨水区 和 Cho Dong Thanh(Dong Thanh市场)附近的后街摆摊,售卖烤螺、清蒸蛤蜊、血蛤和海螺,搭配各种蘸料——姜汁鱼露、盐和青柠,或是味道浓郁的虾酱。

    这里的吃螺仪式是社交性的,节奏缓慢。你可以按重量或按篮子(gio)购买,坐在矮凳上,用牙签或小叉子挑出肉,再配上一杯bia hoi或其他冷饮。一个人享用一顿丰盛的海鲜大餐,预算在60,000–120,000 VND左右。

    值得专门点的品种包括:oc huong(香螺,个头小而鲜甜)、ngheu hap sa(香茅蒸蛤蜊)和 so huyet(血蛤,配青柠和辣椒,半生熟)。血蛤内部呈粉红色到红色——这是正确的烹饪方式,并非没煮熟。

    一碗配有酥脆配料的诱人亚洲汤粉,盛在花纹碗中,是地道美食爱好者的绝佳选择。

    Banh Mi Cay — 值得一提的当地特色

    海防有自己版本的banh mi——特别是辣味猪肉和肉酱口味,里面的辣椒油比你在Saigon的banh mi里见到的要多得多。它虽然不如Banh da cua出名,但清晨在 Tam Bac湖 附近的摊位买一个尝尝非常值得。价格在15,000–20,000 VND左右。

    Cho Sat 和 Cho Dong Thanh — 必逛的两个市场

    想要了解当季的新鲜海鲜,Cho Sat(铁市场,位于Tran Phu街)是该市的主要生鲜市场,早上5点开始营业。里面的海鲜区有活蟹、螳螂虾、鱿鱼和来自附近的 Cat Ba 和下龙湾海域的鱼类。你可能不会买回去自己做,但逛一圈就能知道当天什么最新鲜,这能帮你决定午餐点什么。

    Cho Dong Thanh 位于更东边一点,规模较小,更具社区气息。其入口处的螺类摊贩是该市晚上吃Oc的最佳去处之一。

    盘中盛放着美味的熟海螺,配有蘸酱,是亚洲海鲜美食概念的理想选择。

    饭后去哪喝一杯

    海防在歌剧院附近的 Dinh Tien Hoang街 有不错的bia hoi氛围。这里不像Hanoi的Bia Hoi Corner那样喧闹,但啤酒很冰,如果你招招手,附近的街头小贩会把食物送到你的桌上。越南咖啡——特别是ca phe sua da——随处可见,当地人更偏爱老式店面出品的浓郁深烘焙咖啡,而不是连锁店。

    实用贴士

    海防非常适合从Hanoi出发进行一日游(通过河内-海防高速公路约120公里,从My Dinh车站乘汽车或豪华巴士约需1.5小时)。大部分美食的营业时间集中在早上6点至10点,以及下午4点至晚上8点——请围绕这些时间段安排行程,否则你可能会看到关门的店铺和空荡荡的锅。
