在越南,点饮品和点食物一样重要。选错了,饮品会与食物的味道“打架”;选对了,一切都会变得和谐——油脂感被化解,辣味被提升,各种风味完美融合。

搭配背后的逻辑

越南街头美食有着大致的时间规律,饮品也是如此。早晨属于咖啡,中午偏向冰茶,晚上则是啤酒的主场。这些并非硬性规定——你在河内上午10点也能看到人们喝“bia hoi”,在Saigon晚上9点也能看到有人喝黑咖啡——但这些规律在大多数情况下非常实用。

酸度、油脂和香料是需要考虑的三个变量。油脂丰富的菜肴需要清凉微苦的饮品;以草本清新风味为主的菜肴需要不抢味的中性饮品;带有强烈辣椒辣味的菜肴则需要糖分或碳酸来缓解。

Bun Cha + Bia Hoi

这是大多数游客无意中尝试出的最佳搭配。“Bun cha”——烤猪肉饼和五花肉配米粉、咸甜适口的蘸汁以及一堆香草——本身就非常油润。这通常是河内人在上午11点到下午1点之间享用的午餐。

“Bia hoi”,即每天新鲜酿造的生啤,每杯仅需5,000–10,000 VND,是它的绝配。它口感清淡,酒精含量仅3%左右,对于习惯了精酿啤酒的人来说可能略显淡薄,但在这里却恰到好处。Bia hoi淡淡的苦味能化解烤肉的焦香,并在咀嚼香草间隙清爽口腔。你不需要细品啤酒的味道,而是去感受它带来的清爽间歇。

如果买不到bia hoi,一杯冰凉的“ca phe sua da”(冰炼乳咖啡)也是一个出人意料的好选择。咖啡的甜味能完美衔接咸鲜的蘸汁。

Banh Mi + Ca Phe

这是早晨的黄金搭配。“Banh mi”——越南法棍三明治,内馅包括肉酱、冷切肉、腌萝卜丝和胡萝卜丝、黄瓜和辣椒——在街头摊位仅需25,000–40,000 VND,几分钟就能站着吃完。

搭配的饮品是越南咖啡,如果天气炎热,通常选“ca phe sua da”;如果吃得早、空气还带着凉意,则选热黑咖啡。越南咖啡非常浓郁——通常是罗布斯塔豆,用金属滴漏壶(phin)萃取——这种强度正是banh mi所需要的。肉酱的浓郁和蛋黄酱的油脂感,在咖啡的苦味和咖啡因的刺激下找到了平衡。这是为早上7点就开始工作的城市量身定做的早餐。

不要尝试用甜味饮料或果汁搭配banh mi,这会让肉酱的味道变得很奇怪。

Banh Xeo + Tra Da

“Banh xeo”——用米粉、姜黄、椰奶制成的滋滋作响的咸味煎饼,内馅有虾、猪肉和豆芽——吃的时候需要撕下一块,用芥菜叶或米纸包裹,加入香草,蘸上鱼露(nuoc cham)。这是越南中部和南部的特色菜,最适合在下午或傍晚享用。

这里的标配是“tra da”:免费的冰绿茶,随时续杯,盛在越南几乎每家塑料桌椅餐厅都有的划痕塑料杯里。它不仅免费,而且功能强大。茶的轻微涩感能清除煎饼的油腻,且不会干扰蘸汁的味道。冰凉的温度是另一半功劳——banh xeo上桌时还热气腾腾,煎饼的酥脆与冰茶的清凉形成对比,这也是享受的一部分。

啤酒也可以,在Da Nang和Hue,吃banh xeo配上一瓶冰镇当地拉格啤酒是很常见且正确的选择。但tra da是日常搭配,而且它是免费的。

Goi Cuon + Tra Da 或 椰子水

“Goi cuon”——新鲜春卷,内馅有虾、猪肉、米粉、薄荷和生菜,用米纸包裹——口感清爽、轻盈且充满草本香气。它们不需要会抢味的饮品。

再次推荐tra da,或者nuoc dua(直接从椰壳中取出的嫩椰子水,街头摊位约15,000–20,000 VND)。两者都是中性且冰凉的。椰子水带有一丝淡淡的甜味,能衬托出虾的鲜美。啤酒会掩盖香草的味道,咖啡则显得格格不入。这是适合午餐或清淡晚餐的菜肴,配上最冰凉、味道最淡的饮品即可。

Bun Bo Hue + Ca Phe Den

“Bun bo Hue”是pho的“辛辣复杂版”——以香茅和虾酱为基底的牛肉猪肉汤,配上粗圆米粉,辣味十足。它是Hue的特色菜,但在越南各地都很受欢迎,几乎总是作为早餐。

搭配是一小杯热的黑咖啡“ca phe den”,在吃完面之后饮用,而不是边吃边喝。其逻辑不在于解腻——bun bo Hue比bun cha的油脂感少——而在于餐后的收尾。咖啡能平复辣椒带来的燥热,让你开启一天的早晨。这是一种顺序搭配,而非同时搭配。

Banh Cuon + 热茶

“Banh cuon”——蒸米卷,内馅是调味猪肉末和木耳,配上cha(越南猪肉香肠)和鱼露——是一种精致的早餐,口感柔软,通常用筷子和勺子食用。

搭配是纯热茶,不要冰的,也不要咖啡。这道菜太温和,不适合苦味或冰凉的饮品。河内的许多banh cuon店会自动端上一小壶热莲花茶或茉莉花茶。在咀嚼间隙饮用,这是最正确的做法。

实用小贴士

价格因城市和街区而异——河内老城区的bia hoi比Da Nang的同款玻璃杯装啤酒更便宜。在街头坐下来的摊位,tra da通常是免费的。如果店家收费,那是地段的溢价,而非饮品本身的费用。这里提到的大多数搭配,饮品部分的价格都在30,000 VND以下,请根据预算安排。
